When I found that my refrigerated garlic cloves had sprouted on New Year's day I popped them in some soil and the next day this is what we saw.
If any food sprouts I am driven to plant it and see what we get. These New Year's babies came from a few garlic cloves I had peeled and put in the refrigerator in a small plastic bag.
When I got around to using them, they had all sprouted wonderful little roots, so I planted them lightly covered with soil.
This is what they looked like 4 days later.
Sweet potatoes should be easy to sprout but lately the ones we find in the supermarket have so much growth retardant on them I consider myself blessed indeed when slips form.
I love to eat the fresh young leaves of the sweet potato plant and they are highly nutritious. When the leaves open up a bit, and are pinched back, the plant develops into a lovely houseplant.
Moving? Leaving for vacation? No problem, just eat up the plant and start and new one when you are ready. These do not grow as fast as some edibles but are worth the wait, in my opinion.
