Blueberry Muffins

I am baking more since we got the countertop NuWave Infrared Convection Oven (As Seen on TV).  I don't mean to sound like a commercial for this thing because this is not a sponsored post, but I just love it to death. 

These muffins were just from a box mix, but I threw in a handful of fresh ground flax seed for the benefit of the healthy Omega 3 those little seeds have, and then to give them a crunchy top, I ground instant oatmeal flakes in the Magic Bullet to make oat flour which I mixed with a l ittle brown sugar and enough butter to make it creamy and spread that over the top of each muffin before baking.
